Recipes with Oats

Here are my favourite ways to eat my oats...

After my post about how amazing oats are last week, I know you have all been so excited waiting all week for some recipes to try out and get more oats into your everyday lives!

One of my favourite ways to eat oats is to have them for breakfast, and my overnight oats recipe is something I make in a big batch on a Sunday night and have 4 or 5 times during the week. They're as simple as: equal quantities of oats, milk of your choice (I use almond milk), and yoghurt of your choice (I use skyr, lots of protein goodness). I use the yoghurt pot to measure out everything into. Mix with some chia seeds, and leave for at least 4 hours in the fridge (but they'll keep up to five days). One of my favourite ways is to stir in cocoa powder and raisins for a chocolatey hit or top with my favourite berries.

Next recipe is my carrot 'cake’ porridge. Simply stir in a handful of grated carrots to milk and oats, add in raisins and cinnamon (and cocoa powder if you like) and microwave/cook on the hob until the oats are soft. This is my new favourite!

My final recipe is so versatile and can be done three ways. Simply combine 1 mashed banana with 120g oats.

For cookies, add filling of your choice (we love dark chocolate chips and raisins), shape into small patties and bake for 15-20 mins. Keep an eye on them and bake for longer if you like them crisper on the outside! My husband Peter has been to petitioned to make these every night Bake Off has been on!!

For granola, add a chopped apple and mixed nuts/seeds on your choice, separate into little bits on a baking tray and then bake until as crisp as you like. This will keep for about a week, depending on how long you gave it in the oven.

Finally, for chocolate cheesecake, bake the oats and banana for the base until crisp. For the top, blend silken tofu (about 300g), melted milk/dark chocolate (about 270g) and 6-8 soaked dates/prunes. Spread over the base and leave to set. It's like a chocolate mousse on top. This was sooooo good!!! It wasn't healthy stuff pretending to be cheesecake - it was better!!
